Wagyu Beef

Black Gold Ranch is a family owned, working cattle ranch. Family owned since 1975. The VP ranch was purchased by Kiley and Abbie from Kiley's grandfather Doy in 2008. The ranch lies just south of Holbrook and the Little Colorado River valley. Kiley and Abbie started raising wagyu cattle in 2016. It has always been a family affair. Riley, Kelton, and Brooks are as much a part of this ranch as mom and dad. Our cattle are all-natural grass raised, and grain finished slowly to ensure the superior wagyu characteristics of marbling and tenderness. We provide the utmost care and attention, so the end result is the highest quality natural meat.

Family Raised... Exceptional Quality

Why Wagyu?
The defining characteristic of Wagyu beef is its exceptional marbling. Unlike any other beef, Wagyu is interspersed with a high degree of intramuscular fat, giving it a unique marbled appearance. This marbling not only enhances the tenderness of the meat but also infuses it with a rich, buttery flavor that melts in your mouth. Additionally, Wagyu has a lower melting point than other types of beef, meaning it practically dissolves into a luscious, velvety texture when cooked. This luxurious experience is what sets Wagyu beef apart and makes it a coveted choice for gourmets worldwide.
And what is better than taste? When it comes to health benefits, Wagyu beef holds a few aces. The intramuscular fat in Wagyu is predominantly unsaturated, making it a healthier option compared to other fattier cuts of beef. This fat composition can lead to lower cholesterol levels and provide essential fatty acids that are beneficial for heart health.

Featured Cuts

Sirloin Steak
Sirloin in one of the most affordable and popular steaks in restaurants. This is a cut from the boneless area of the loin. It has a slightly firmer texture than other steaks but is still a tender, juicy and flavorful cut of beef.

Filet Steak
Our American Wagyu filets are boneless cuts from a portion near the tenderloin. Filets are known for its mild flavor, naturally tender and modest intramuscular fat. However, our American Wagyu filets contain a surprising amount of marbling which adds a higher level of richness.

New York Strip Steak
The New York Strip has the firmness, short grain texture, and rich beef flavor most people associate with a classic steak. If a New York strip is both attached to the bone and includes tenderloin it is called a porterhouse steak or a t-bone steak.

Ground Beef
Wagyu beef simply makes for the most luscious and flavorful burgers ever. The marbling melts and helps create a perfect crust, sealing the juices into the patty, until that first, mind-blowing bite.
